Beet Boost Borscht

Beets are the star of borscht, a traditional soup in Eastern Europe. If you have never tried borscht before, and feel skeptical, you are not alone. But trust us, this soup is delicious. Our recipe adds a serving of Beet Boost to guarantee a vibrant soup packed with nutrition. Add tofu for protein and you’ll have a balanced meal in one bowl.

Makes 4 servings

Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 medium onion
  • 4 cups vegetable broth
  • 2 tablespoons Beet Boost
  • 3 medium beets, including tops
  • 2 medium carrots
  • 2 cups finely chopped cabbage
  • 1 medium russet potato
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Garnishes (optional) fresh dill, chives, parsley, vegan sour cream

Directions

Peel and dice beets, carrots, onion, and garlic. Sauté vegetables until they begin to soften, about 10 minutes. Stir in broth, Beet Boost, cabbage and potato. Raise the heat and bring to a boil. Lower heat and allow to simmer fro 15-20 minutes, adding more water or broth as needed. Stir in lemon juice, salt, and pepper; garnish and serve.
