Our recipe adds a serving of Beet Boost to guarantee a vibrant soup packed with nutrition. Add tofu for protein and you’ll have a balanced meal in one bowl.
Makes 4 servings
Peel and dice beets, carrots, onion, and garlic. Sauté vegetables until they begin to soften, about 10 minutes. Stir in broth, Beet Boost, cabbage and potato. Raise the heat and bring to a boil. Lower heat and allow to simmer fro 15-20 minutes, adding more water or broth as needed. Stir in lemon juice, salt, and pepper; garnish and serve.
